What a busy Christmas we had! We were able to get our whole family together, including all 7 grandchildren for a fun old-fashioned family Christmas.

2024 was such a successful year for our farm that we sold out of all our beef and pork! We're busy now raising 2025's beef and planning our other crops and products for the year.

Freezer Ready Breakfast Sandwiches

Looking to save money and make more of your own food from scratch in the new year? Our son-in-law has kicked his frozen Jimmy Dean breakfast habit and they've instead been making this homemade version. Batch cook and freeze them up for the whole week, then throw them in the microwave on your way out the door in the morning.


Makes 8 Sandwiches

Ingredients:

8 large and thick biscuits*

8 eggs (Available self-serve on our porch for $5 a dozen)

1lb pork sausage

salt

pepper


*We love Fannie Farmer's Baking Powder Biscuits, but you can use whatever recipe is your favorite!


Directions:

Prepare and bake biscuits first. Crack all eggs into a bowl and lightly beat to combine whites and yolks. Ladle eggs into hot greased frying pan to make roughly 3x3" egg patty. An egg ring or poaching mold works really well for this! Sprinkle salt and pepper to taste on egg patty before you flip it. Cook in batches until you have 8 egg patties. You want them cooked all the way through and not still wet, but do not overcook, since the sandwich will be cooked again after coming out of freezer. 


Form sausage into 8 patties, just smaller in diameter than the eggs. Cook in a hot pan or griddle until completely done. Be careful to avoid drying the meat out, again since it will cook twice. 


Slice the biscuits in half lengthwise with a bread knife. Place an egg patty and a sausage patty onto the bottom half of biscuit and then close with the top. Optionally you could add a slice of cheese here. Wrap sandwiches in parchment paper and place in a freezer safe bag or container. Let the sandwiches cool completely before you put them in freezer so that they don't get wet from condensation. 


Microwave time will vary a bit depending on microwave, but 50 secs in the paper, then flip and another 50 seconds is a good place to start.

2025 Crop Plans

Last summer may have brought us a somewhat underwhelming harvest of some of our crops, but it hasn't stopped us from planning for this summer. We hope to bring more sweet corn and pumpkins to market. Last summer our dry bean crop was only enough for replanting, but this year we hope to bring you dried beans for all your family recipes!


Is This the Year?

Will 2025 finally be the year that we set up our sugaring equipment and tap our trees to make some fresh maple syrup? We sure hope so, but we've only got a few weeks to make that happen so we'll see.

Time for a New Flock

Our egg production has taken a hit recently, as many of you may have noticed. It is about time to add some new laying hens to our flock. Once it warms up a little bit more, we will probably raise another bunch of broilers as well.
