Big News! This past weekend we made a journey to Kentucky and brought home our third Suffolk Punch mare! Lena is already broke to ride and drive-- which means she's ready to start work on the farm right away. Not to mention that she will help us get Holly and Tilly ready to go. The other horses are still taking a minute to get to know her, but she's already won us over with her sweet disposition!


Beef Burgers-- one variation

We know that you can get frozen hamburger patties in your Hill Place order-- one of the easiest ways to go from freezer to grill to bun-- but here we offer a variation for when you want to spend a little more time on your burger. This method, a favorite of our son-in-law, ensures that the patty stays together, stays super juicy, and is the perfect vector for delicious burger toppings!
Ingredients
1 lb Hill Place ground beef
1 egg (Hill Place eggs $4/doz and always available!)
1/4 cup bread crumbs
1 slice per burger Sharp white cheddar
Instructions
In a bowl, mix thawed beef, egg, and bread crumbs until well combined. You probably need to use your hands, and it will knead for longer than you think. Once mixed, shape into 3-4 patties (depending on size preference) and place on hot griddle. Cook to desired done-ness, flipping just once. After flipping top with cheese. By the time burger is done cooking the cheese will have melted in.
Serve on a warmed bun with selection of toppings (sliced dill pickles, grilled onions, assorted condiments, etc) for everyone to choose their own.
Spring Busyness
It may be chilly here this morning, but it is also impossible to deny that spring has finally arrived. With it comes a whole new season of tasks to complete. We're working on getting all our garden starts set up, checking pastures, and getting everything ready for our long awaited farm store opening (stay tuned for more details on the store!).

More Beef Coming!
In keeping with our long term plan, our freezers should be refilled with beef in the next couple of weeks. In order to provide more cuts and options to our customers, we hauled our cattle all the way to Eagle Bridge, NY to utilize their USDA butcher and smokehouse. We can't wait to taste what we get back!
Horse Work
As we've already mentioned, Lena comes to us already broke to drive and already used to working on a farm. We don't want her to get bored, so we're working on a list of tasks that we usually do with a tractor (or by hand) that Lena and the forecart can do instead.
