It's Christmastime! We are getting ready to have a full house since both our daughters and their families will be with us for the Holiday.

Ground Beef Chili
From: Dave Clark
That Christmas roast can only carry you through so many meals; when you run out of leftovers try mixing up a pot of this warm, sweet and spicy chili (you can order your ground beef through our website for pickup at the farm).
Ingredients
1 lb Hill Place Ground Beef
1 Can of chili style beans
2 quart sized cans of tomato sauce
1/2 an onion (finely chopped)
1Tbs chili powder
1 Tbs Worcestershire sauce
1 cup sugar
1 tsp salt
Instructions
Sauté finely chopped onion in butter in the bottom of a large pot. Add beef, chili powder and salt. Brown beef. Once meat is cooked, add in can of beans, sugar, and the tomato sauce. Mix to combine. Bring to simmer for 1 hour. Stir in Worcestershire sauce.
If you have space in your fridge, store leftovers in the pot. They reheat fabulously this way. Can be served as is with buttered bread or topped with shredded cheese and fixings of your choice.

Wintertime
We're all hunkered down for winter over here. Our animals are back from pasture, our strawberries are strawed in, firewood is ga-- well firewood is an ongoing task, but the fires are burning!

We are milking again!
Rosebud, our second generation Holstein-Jersey heifer recently gave birth to her first calf! Her baby, Delphinium, is half Angus and will contribute to our beef herd. In the meantime, we are very excited to have fresh milk and butter again.
Holly and Tilly
Now that we have our custom Amish-crafted harnesses, we have started into the work of breaking Holly and Tilly to drive. This will be a slow process, and they're still very young, but we can already hear the jingle bells on the sleigh!

Piglets have arrived!
After much deliberation, we have decided to raise four more piglets this winter! We are currently working on building their pastured yard and shelter so that they have a good place to grow. All of this work will pay off though when we have fresh pork again to offer!
